Indulge yourself with this cheesy Italian treat from Pasquale Amico at Via Condotti for Taste of London
1. Beat the eggs in a shallow bowl and season with salt and pepper. Place slices of mozzarella between two slices of bread to make four sandwiches. Dust each sandwich with flour and coat with the eggs.
2. Pour the oil in a pan and cook the bread until golden and crispy. Place on paper to dry the excess fat.
3. Place the rocket in a bowl and add salt, pepper and olive oil. Place the rocket on a plate cut the mozzarella in two and enjoy.
