Andy Lassetter at Cocoon heats up the kitchen with glorious Wagyu beef cooked over hot rocks for Taste of London. For more, read our interview with Andy.

Serves 4

Ingredients

For the beef

  • 900g Australian wagyu sirloin, thinly sliced
  • 4 tbsp sesame seeds

For the sesame soy sauce

  • 4 tsp sesame oil
  • 4 tsp soy sauce
  • 2 tbsp mirin

Method: How to make Wagyu beef on hot rocks

1. Heat small barbecue rocks to about 150ºC. Place the thinly sliced wagyu beef on top. Combine the sesame oil, soy sauce and mirin and sprinkle with this sesame soy sauce.

2. Sear until done, about 2 minutes on each side.

3. Sprinkle with sesame seeds to serve.
