Squid salad with sweet chilli vinaigrette from Atul Kochhar from Benares for Taste of London

Serves 4-5

Ingredients

  • 500g squid, cut into rings
  • 2 tbsp rice flour
  • 2 tbsp corn flour
  • 1 tbsp red chilli powder
  • 20g ginger garlic paste
  • 1 lime, juiced
  • Salt
  • 3g chat masala (spice mix)

For the sweet chilli vinaigrette

  • 100g sugar
  • 2g chilli flakes
  • 10ml honey
  • 100m red wine vinegar

Method: How to make squid salad with sweet chilli vinaigrette

1. Mix all ingredients and deep fry till crisp. Dress with passionfruit and sweet chilli vinaigrette. Toss in some colorful salad leaves.

2. For the sweet chilli vinaigrette, caramelise the sugar till light brown and then add red wine vinegar. Add chilli flakes and allow it to simmer, adding honey to finish.
