Fried rice for breakfast. A weird habit I picked up in Asia. Not very healthy but it sets me up for the day
Well, I'm going to be in Poland tonight, so, some traditional Polish sausage, sauerkraut, mustard, rye bread, beer. Perfect!
On a beach in Indonesia, waves gently crashing on the sand, freshly caught fish, palm trees swaying...
Barbecue, for sure. As a South African, that's what we live on in the summer. I love the whole informal thing, everyone helping with the cooking, having a few beers and a good time in the sunshine
Chocolate, lime and chilli souffle at college. Something I'd rather forget. Yuck!
Aga, no question
I'd have to say hot curry. I love spicy food and especially stuff from Asia. I reckon I could eat curry every day, no problem
French fries
Getting a reservation at El Bulli in Spain. It's often cited as the best restaurant as the world. I would love to go there just for the experience
A bad service at the restaurant. I try and be as organised and prepared in the kitchen as possible. I hate not being ready for a busy night and then things get out of control. It's a horrible feeling and I really think the customers notice it in the food
Keep tasting and adjusting as you are cooking. Always think about if there's enough salt and pepper in what you're cooking and whether the balance is right. Does it need to be sweeter, saltier, more acidic?
My kitchen porters! They're an invaluable utensil in the kitchen. I expect a lot from them. If they show potential, there's always the chance to try training them as a chef. That's how I started!
Keith Floyd, when he was younger, doing his TV shows. It must have been an amazing experience, meeting all of those people all over the world, learning how they cook their favourite regional food
Probably Joanna Blythman. Her reviews are always all about the food and restaurant, not herself. I have eaten in a few of the restaurants that she has reviewed and always thought that her criticisms were justified. She has reviewed First Coast too and gave us a great one so of course I like her for that.
Crustaceans and kiwi fruit. I'm allergic to both. Shellfish is probably my favourite thing to cook. I love serving it in the restaurant but I'm slightly allergic to things like lobster and langoustines. It's really frustrating because they taste so good! Kiwi fruit is not such a loss.
