There's nothing traditional about toffee cheese, one of the specialities from the Halifax-based cheese makers Traditionally Cheesey. But the husband and wife team have won many an award for the more usual regional fromage.
After buying the cheese in from local dairies, the pair experiment with different recipes from minor twists on classics such as Applewood Smoked to more adventurous concoctions like cheese with strawberry and champagne.
