"This is a great way to prepare chicken breasts. The texture of the crisp cooked prosciutto goes brilliantly with the tender chicken. Bashing the chicken out thinly before you start cooking means it cooks much faster than a regular chicken breast."

Serves 2

Ingredients

  • 30g Parmesan cheese
  • 2 sprigs of fresh thyme
  • 2 skinless chicken breasts, preferably free-range or organic
  • Freshly ground black pepper
  • 1 lemon
  • 6 slices of prosciutto
  • Olive oil

Method: How to make Parmesan chicken breasts with crispy posh ham

To prepare your chicken

1. Grate your Parmesan.

2. Pick the thyme leaves off the stalks.

3. Carefully score the underside of the chicken breasts in a criss-cross fashion with a small knife.

4. Season with a little pepper (you don’t need salt as the prosciutto is quite salty).

5. Lay your breasts next to each other and sprinkle over most of the thyme leaves.

6. Grate a little lemon zest over them, then sprinkle with the Parmesan.

7. Lay 3 prosciutto slices on each chicken breast, overlapping them slightly. (Watch the video of Jamie making this chicken breasts recipe)

8. Drizzle with a little olive oil and sprinkle with the remaining thyme leaves.

9. Put a square of cling film over each breast and give them a few really good bashes with the bottom of a pan until they're about 1cm thick.

To cook your chicken

1. Put a frying pan over a medium heat.

2. Remove the cling film and carefully transfer the chicken breasts, prosciutto side down, into the pan.

3. Drizzle over some olive oil.

4. Cook for 3 minutes on each side, turning halfway through, giving the ham side an extra 30 seconds to crisp up.

To serve your chicken

1. Either serve the chicken breasts whole or cut them into thick slices and pile them on a plate

2. Serve with some lemon wedges for squeezing over, and a good drizzle of olive oil.

3. Lovely with mash and green veg or a crunchy salad!

  2. This recipe has been written terribly. If you watch Jamie's web video of this recipe it is beautifully simple and straightforward but the written recipe makes it all sound terribly convoluted, is not in chronological order and doesn't follow what Jamie does on the video. A real shame as I imagine that people who aren't confident about their cookery skills will search for this recipe due to the success of the MOF show and then struggle because it's been so badly written. NOT what Jamie would have wanted I'm sure.

  4. Hi Jamie Oliver, what a star you are!! I've tried numerous of your recipes from the Ministry of Food, the chicken with posh ham is my favourite, swiftly followed by the glazed pork chops. Both are so very easy to do and so absolutely scrummy! I've done my bit for "pass it on" and have even succeeded in getting three of my friends to buy your book. No-one who I've passed your recipes to has been dissapointed. Keep up the good work. My only negative comment would be about your copious swearing on your Ministry of Food show - WHY?? It really isn't necessary and if anything spoils an otherwise brilliant show.

  5. Hello Jamie Oliver! I watched the show and thoght it was brilliant and very inspiring. I got the MOF cookbook as a present in November and have made over 20 recipies from it already. All have been delicious and i hadnt done much cooking before. Plus they are so quick and easy that my usual too knackered after work to make anything theory has been obliterated! Get the book people - it is fanatsic. I've got over 30 cookbooks and never got round to using them as the list of ingredients were too long or i didnt havent the right stuff in or it took too long to make. Now ive bought the essentials im cooking almost every night, my husband and I even fight over who is going to make it! Keep up the good work.

  6. Congratulations Jamie, your ministry of food series has truly inspired me to try this idea in the area that i work. I cooked your parmesan chicken recipe last night for my family and you were right everyone loved it, even my dad!(Hard customer to please)They enjoyed watching me cook as they waited to eat and have all been inspired to try this recipe. Can't wait to attempt another recipe and get some more great comments from my family. Your making me look like a great cook, i feel more confident about cooking and im loving it. Thank you!

Aloha Jaimie, One early morning 2 days ago, I just happened to watch your show, "Jamie at Home" for the first time and was wowed by how simple your cooking methods are and I just love the spices you use. So tonight, I took a shot at one of your recipes, the Parmesan Chicken Breasts with Proscuitto Ham. At first I was a little hesitant on using the lemon zest, but in your video you said it was a must, so I did it...and WOW It really is a must! I served the chicken breast over a warm spinache with mushroom salad and made instant saffron rice (so easy to make) on the side. As we say in Hawaii, "Broke Da Mouth!!!!" Even my husband agrees, that was the best meal I ever cooked! Mahalo nui loa (Much thanks) for your recipe! Aloha!

  8. Jamie! Loved Ministry of Food. Watched it with my kids and brilliant to listen to you reinforcing everything I'd ever told them about healthy eating! I have a major problem with your bugers though. Why do you use crackers? White refined flour etc? I make them using oatsand natural yogurt instead of egg - delicious and very healthy! Cooked the Parmesan chicken last night as my first pass it on, even managed it with a broken arm (which i did yesterday also), but i had some left over and had it cold with salad for lunch and it was just as nice if not nicer!!! I would recommend you double your quanity and have a nice lunchbox the next day!!

  12. Just had another thought. Pass it on is all very well but where it falls down is that in the show the people passing it on were never shown making a committment to also pass on a second and then a third recipe. Passing on just one recipe without committing to a time and place to pass on a further recipe obviously had its problems.

  13. MOF was a great but I agree with Pat D about the swearing. Believe it or not I sometimes swear even more than Jamie, but never in public and I believe it is rarely appropriate for televion. I think if Jamie didn't swear it wouldn't remind us of another chef who, incidetally,I have stopped watching because of it. That aside, perhaps we could see a follow-up on Natasha who came to realise with emotion that she had the ability to change her life for the better.

  14. Dear Jamie (If you ever read this comment:) I think the people of Rotheram are blind to the selfless help and great advice that Jamie is trying to empower you with. Obesity is a dangerous and unhealthy lifestyle, and a personal choice. Congrats Jamie for all you are doing. I admire your efforts and would like you to continue your excellent work. It can only be a bonus if only 1 person listens. Those who want to see the wrong and take offense in such a selfless act to improve the quality of Rotherams health are just BLIND!!! Rob from OZ

  18. Yet another super series from Jamie, spoiled only his incessant swearing. Is ther really any need for it, we here, don't remember him swearing at all on 'Jamie at Home', so why did he feel the need to do so in this series. In spite of this however, we still rate him the best of the bunch.Lokking forward to the next series, minus swearing.

  19. i think its a great idea to pass it on,im a single parent myself,and i like to do my best to cook healthy meals for, my son on our buget.and i think jamie oliver puts his all into helping the nation eat healthier,im going to do one of the reciepes at the weekend,then im passing it on to my family.

The knock on effect of having a family sit down TOGETHER and eat a meal TOGETHER must surely be one of the biggest selling points of Pass It On, The street partys show how people at heart want the togetherness that has been lost in many areas. Did anyone else notice how much Claires(?) skin had improved once she started to eat better. The benefits of Pass it on, the fellowship, camaraderie and friendliness that are also Passed on MUST be highlighted to councils everywhere. Perhaps by Passing on this spirirt we can help to improve the lot of many poorer families and the effect of families sitting and TALKING together must surely help on the "Home Front" Keep Passing it ON!!!

  22. To Carol Haywood, it does tell you how to cook the chicken, you put it in the pan and cook it for three minutes on each side. I think what Jamie is doing is great and people need to show some more support!

  23. I love the idea of passing it on but i don't understand why the recipes aren't shown or explained on the show! Surely, it would be easier for everyone to get to grips with recipes if Jamie demonstrated each recipe, that way we could all pass it on! It's also worth remembering that not everyone has internet access or the drive to gather the required information to prepare the food demonstrated - hense living on crisps and takeaways. PLEASE show the recipes so we can all pass it on.

  24. i cant belive why people can cook i dont think its the case of cant but cant be botherd. Im 21 and can cook lots of differnt things my nan was the one that showed me alot but i allso learnt alat from just looking at recipe book and trying it out. I think that cooking suold be compulsary at scools and collages because in a few years time the entire country will be obese and it will be to late then.

  25. I completely agree with the comments about Jamie's bad language. It gets him no brownie points and I sometimes feel that it is all put on - just who he is trying to impress, or 'be matey with'? The receipes are great and even for someone as long in the tooth as me, who has been a Pub Cook, there is always something to learn, albeit a receipe, or a short cut. Keep up the good work (but cut out the profanities), the citizens of Rotherham are a lucky bunch to have been singled out. Pat D

  27. Love the show and fully support what Jamie is trying to do. He is so passionate about it. However, could Jamie please drop the Gordon Ramsey impressions and refrain from so much effing and blinding. I don't remember him using profanity in such abundance in the past and even my husband who is extremely open-minded left the room the other night in annoyance. Despite the 9 o'clock time slot - our children do watch the programme and love it. We have explained the situation to them re. use of bad language in the hope that they realise it is not necessary to use it to get across one's point. In fact, we believe it has much more impact when used only once in a while! You're a great guy Jamie but please at least cut back on the swearing - it lets you down. Good luck!

  29. Jamie's Ministry of Food series is brilliant and I have been watching it every week. I watch as he struggles to get the recipes passed on around Rotherham. It has got me thinking, with ideas. I would struggle to pass on the recipes to people but had some ideas that could help to pass on recipes to other in the hope they would try them and then pass on. One, is similar to Channel 4's email forward system. I get loads of junk mail at work, everyone does, but what if Jamie sent an email to one person and asked them to forward the email on to say 5 other's and set it up with say a reply system for the person receiving the email to try the recipe and feed back to the sender their comments, this way encouraging them to try the recipe, the email could be sent once a week with new recipe's, imagine how many people this would reach? Any way if I received it would definitely try the recipe and pass on. I would love to be the first to try this out. My second idea is for Jamie to hit the schools again and start with the kid's at school. Contact loads of schools ask them to take part and start teaching the kid's to cook the pass it on recipe's, they can pass it on to family back home and then from their the family could pass it on to friends. What about after school club's where parent's can attend with their kid's to cook Jamie's recipe's, get the Parent's association involved as well so they can maybe set up cookery lesson's via Jamie and raise money for the school? healthy food, healthy kid's , healthy parent's. I would attend if my daughter came home asking me to join in. I would find it fun. Anyway, you have probably thought of these ideas but just wanted to add my ideas just in case!
