Jamie says: "This is dead simple, completely versatile and absolutely gorgeous. It's not a pretty-boy pie; it’s a proper, old-school pie that everyone will be over the moon to see on the table. I’m putting leftover white turkey meat to good use here, but you could also mix brown meat in there too."

Serves 6-8

Ingredients

  • 2 rashers smoked streaky bacon, roughly chopped
  • ½ bunch of fresh thyme, leaves picked
  • Olive oil
  • A large knob of butter
  • 2kg leeks, washed, trimmed; white end chopped into chunks, green end finely sliced
  • Sea salt and freshly ground black pepper
  • 800g cooked white turkey meat, torn into big chunks (brown too if you want)
  • 2 heaped tbsp plain flour, plus extra for dusting
  • 2 pints turkey, chicken or vegetable stock
  • 2 tbsp of crème fraîche
  • 1 x 500g packet puff pastry
  • 12 jarred or vac-packed chestnuts, roasted and peeled
  • 2 sprigs fresh sage, leaves picked
  • 1 egg, preferably free-range or organic, beaten

Method: How to make Jamie's turkey and sweet leek pie

1. Preheat your oven to 190°C/375°F/gas 5. Put your bacon in a large pan on a medium heat and add your thyme leaves. Add a lug of olive oil and the butter and let it all fry off a few minutes. Add all of your prepped leeks and fry them off for about 3 minutes so they are well-coated in the butter. Add a pinch of salt and pepper then pop the lid on top, turn the heat down to medium and let them cook away gently for 30 minutes, stirring every 5 to 10 minutes to make sure they don't catch. There’s going to be enough moisture in the leeks to keep them happy in the pan so they should be soft and melt in your mouth once they’re done.

2. When your leeks are ready, add the turkey meat to them and stir. If you've got a bit of stuffing mixed in there you can put that in too. Add the flour, mix it in well then pour in your stock and stir again. Add the crème fraîche then turn the heat up and bring everything back up to the boil. Have a taste and add a bit more salt and pepper if it needs it then turn the heat off. Pour the mixture through a sieve over another large empty pan and let the wonderful gravy from the mixture drip into the pan while you roll out your pastry.

3. Get a deep baking dish roughly 22 x 30cm. Dust a clean surface and a rolling pin with a bit of flour and roll your pastry out so it’s about double the size of your dish. Crumble the chestnuts over one half of the pastry then tear a few of the sage leaves over the chestnuts. Fold the other half of pastry on top then roll it out carefully and evenly so you have a rectangle big enough to cover your baking tray. Don’t worry if a few bits stick out here and there.

4. Spoon that thick leek mixture from your sieve into the pie dish and spread it out evenly. Lay your pastry on top, tuck the ends under then gently score the pastry diagonally with your knife. Add a pinch of salt to your beaten egg then paint this egg wash over the top of your pastry. Pop your pie in the oven for about 35 to 40 minutes or until the pastry is puffed up and golden brown. When the pie is ready, re-heat the lovely gravy and serve with your pie, along with some peas tossed in butter, lemon, salt and pepper and everyone’s happy!

  1. I thought I would adapt this recipe for Christmas and replace the turkey with Quorn chicken style pieces, which I use regularly in recipes. Being vegetarian, Christmas lunch becomes quite boring. Could I cook this pie in advance and freeze it? It sounds deliceous!!

  3. I cooked a variation of this recipe for the 3rd time last night and it is delicious every time! Instead of using leftover Christmas turkey I poach chicken breasts in the stock first, then shred them, adding that stock back to the mix as per the recipe. To Teresa who didn't like it - you cooked your leeks too long and perhaps started with a tasteless turkey - this is a no fail recipe!

  5. I was really looking forward to making this and I have to say it was somewhat of a disappointment I felt it was lacking flavor and the leeks seemed to go into a congealed mess! What a shame as a lot of work went into it!

  13. Jamie, we tried this pie and it was great. However as I can't eat leeks I used cauliflower and carrots instead. It was delicious. I am making it again using fresh turkey strips, as turkeys are difficult to buy after Christmas.

  17. As soon as I saw this being made I thought this would be lovely with rice instead of making it as a pie. I therefore didnt need to put it through the sieve so the sauce could stay with the turkey and leek. I also added chopped celery to it. We really enjoyed it and I will definately make it again.

  18. Well I did indeed make this pie a couple of days ago with left over turkey and it was as everyone described it as "fab". As suggested I cut down the leeks by half and used creme fraiche. Even the presentation looked fab. Will def make it again perhaps with chicken. Keep it coming Jamie.

  21. I tried this but cut down on the leeks. It would have cost ?8 for the leeks alone which I thought was a tad expensive. I replaced half the leeks with 2 very large spanish onions, cooked them first then added the leeks and followed the recipe (ish). I did find the dish a little sweet ( I expect this was due to the onions) however I had some warmed up the next day and used some roast chicken gravy and it was fantastic. Took the edge of the sweetness. Definately going in my book.

  27. Made this before Christmas, the day after seeing it on t.v. with some leftover chicken breasts I had in the freezer. It was super, easy to cook too. Quite a large pie for just two of us, so shared half with a family living nearby. Will be cooking it again early New Year.

  29. Made the pie after the Christmas festivities were over. Brilliant!! Added ham as well as stuffing and the leeks were off our allotment. Made the quantities as in the recipe but divided it into two pies - one went into the freezer.

  34. I've just made this, but with chicken and shortcust pastry and my lord, it was fit. The recipe recommended 2kg of leeks, but just under 1.5kg was more than enough, perhaps I had mutant leeks. Cheers!

My pie is just in the oven-so far it looks & tastes amazing!I was actually after a recipe for Turkey & Stilton pie but came across this recipe & remembered seeing it being done on TV so thought I would give it a go.I have added a litle bit of stilton to the mix once I put it into the pie dish but I think it will still taste great.I only did it with 1kg of leeks & 400g of turkey (what I had left) but I am also feeding less so that should be OK. Really looking forward to eating this shortly & an easy recipe to follow & will def attempt this again. Thanks

Just made this pie with our left over turkey, used half as much leek, but it turned out perfectly, would recommend this to anyone, next time I will be adding lot's of vegetables but using the same base gravy I think it will be just as good. (I did add lots of white pepper at the salt and pepper stage but that it just personal taste I am sure)

  48. Made this yesterday and I found it to be foolproof (even for me). I bought ready rolled puff pastry in one sheet so I didn't bother to squidge it up and re-roll it. It was circular in shape so I did it like a pasty. We both really enjoyed it. Thank you Jamie. In answer to the queries re: auantities of leeks. If you're making the full quantity of recipe you definitely need 2 kg. When you cook them they melt down a lot. I only made half the quantity and my husband finished the rest for tea. WILL IT FREEZE?

Having watched your recent TV program on your Chicken and sweet leek pie I popped in to Sainsburys in Stortford and picked up the Bits.I made it last night I used all the ingedients plus I made It a real pucka pie by adding chunks of ham of the bone and a few flats It was amazing the flavours were truly amazing.I think your Dad should put it on the Menue as a Special.   54. Hello Jamie. Thank you for this fab recipe - it's the only one this season that I've copied out in longhand into my keepsake recipe book - a good sign! My resolution for 2009 - teach my children (aged 11 and 8) to cook - not just the baking, which is always fun, but the sensible stuff for supper every night. Who knows, they may even start doing the packed lunches themselves :-)

  57. Great recipe for leftover Christmas turkey. I added loads of leftover sausagemeat and chestnut stuffing and replaced the creme fraiche with double cream. Only used 3 leeks but I think six would have been a good number, don't know how much they would weigh though.

  68. Amanda, Jamie didn't say 2 leeks, he said 2 kilos of leeks!!! If your sister only used 2 leeks, that won't be nearly enough. I used the full 2 kilos making it today and wish I'd thrown another couple in on top of that. This is the perfect Boxing Day comfort food recipe - dead easy to make, looks beautiful and (most importantly) tastes wonderful. If you follow this recipe exactly as it's written, it will turn out exactly the way it did when Jamie cooked it on TV. But don't forget to use the correct amount of leeks...

  69. Watched the programme and tried the recipe (without chestnuts & sage - sadly missed off festive shopping list) on Boxing Day - a winner, thanks. Would tarragon be too strong to add to either the pastry or the filling? Cheers and continued success.

  70. Just made this recipe, and it was a real good. The recipe says 2kg of Leeks, and Jamie also says about 2kg of Leeks on the programme, but I found that to be far too much, and only used about 1kg maximum.

  71. i have tried the mulled wine and the Jerk ham recipes they were very easy to make and the end results were WOW.well my nself and my husband made them together. i am going to try the turkey and leek pie tomorrow again looks very simple. i cant wait. thank you jamie for making our christmas 2008 a special one. it was different but in a good way. xxxxxxxxxxx

  72. Wonder just how many people must be cooking this fab pie on Boxing Day. I for one have it in the oven at the moment and the smell is just wonderful.. Cant wait for my visitors to arrive to serve it up. Thanx Jamie for a great idea on how to use our left over turkey..

  79. My sister has just phoned me from the UK. She is making 2 of these delicious pies! She was panicking and asked me how many leeks went into the pie! Two, I said! "Oh, she said, I have been and bought 4kg, and it looks too much for the recipe!" On TV Jamie said 2 leeks, not 2kg! She has cooked up 5 or 6 so far and still has a carrier bag ful to get through!!!! So funny!!

  94. i tried this tonight with some left over duck, it was fantastic everyone loved it and it was so easy to make. I'll definitly be doing this again with my left over turkey at xmas and i'll be doing it through out the year. 10 out of 10..

  97. Watched the programme last night - very noticeable how much improved it is without any swearing, and specially with a total absence of the F-word which Jamie is usually so fond of using. As it is generally just part of the way he talks, he must have found it very difficult to record - or perhaps it was cleverly edited. Whatever - he is my favourite chef and all the better for not constantly swearing.

Hi C4 Never watch boring foody programmes but was forced to last night and found the Jamie experience fascinating, he is one clever guy who has a masterful understanding of food and his presentation was excellent.   101. This is a lovely recipe although used without the chestnuts as I dont like them. I am going to try it with chicken as I think it would also work. Is there another vegetable that one could use instead of leeks for a change as I think this recipe will stay a favourite for quite some time. Happy christmas.
