Ingredients

  • 4 chicken breasts, each cut into 6-8 strips
  • enough seasoned flour to coat the chicken
  • 2 eggs
  • 200g dry breadcrumbs
  • 1 tsp mixed dried herbs
  • a good pinch of cayenne pepper
  • ½ tsp powdered ginger
  • ½ tsp mustard powder
  • groundnut oil for frying

Method: How to make spicy chicken pops

1. Prepare three shallow dishes, one containing seasoned plain flour, one a couple of beaten eggs and one 200g dry breadcrumbs mixed with 1 tsp mixed dried herbs, a good pinch of cayenne pepper, ½ tsp powdered ginger and ½ tsp mustard powder.

2. Cut 4 chicken breasts into 6-8 strips each. Dip each in seasoned flour, then beaten egg, then coat thoroughly in the spiced breadcrumbs, patting them on with your fingers.

3. Heat a 1cm-depth of groundnut oil in a heavy frying pan over a medium heat. Add the chicken pops and fry for 3-4 minutes, then turn over and fry for another 3-4 minutes, or until deep golden brown all over and cooked through to the middle.

4. Serve with ketchup or homemade garlic mayonnaise.
