Rhubarb, rhubarb. Try this roast honeyed rhubarb recipe from River Cottage Spring.
Serves 4
1. Preheat the oven to 120°C/ Gas 4.
2. Place the rhubarb in a roasting tin in one layer, drizzle with honey and roast for about 30 minutes or until the rhubarb is tender but still holding its shape. Allow to cool before serving with ice cream.
