Ingredients

  • two finely sliced leeks
  • 50g butter
  • 50g plain flour
  • 300ml bitter or pale ale
  • 150g grated cheddar cheese
  • mustard, Worcestershire sauce and black pepper to season
  • a little butter and oil for frying

Method: How to make leeky welsh rarebit

1. Sweat two finely sliced leeks in a little butter and oil until tender. Melt 50g butter in a pan, stir in 50g plain flour and cook for two minutes. Gradually stir in 300ml bitter or pale ale to make a very thick, smooth sauce.

2. Add about 150g grated mature Cheddar, stir until melted, then season with mustard, Worcestershire sauce and black pepper. Stir in the leeks.

3. Pile on to toast and grill until browned and bubbling.
