Hugh put his gorse wine to good use in this delicious cocktail recipe from River Cottage

Serves 1

Ingredients

  • 1 punnet strawberries, hulled and halved or quartered
  • Lemon juice
  • 1 tbsp caster sugar
  • Gorse wine (or use sparkling white wine)

Method: How to make Keo royale

1. Put the strawberries in a bowl with a good squeeze of lemon juice and the sugar. Toss together and leave to macerate for at least half an hour, or until they have released lots of juice. Strain off this juice, which is what you'll need for the cocktail. The berries can be eaten separately.

2. Measure the strawberry juice and mix with twice its volume in gorse wine. Serve well chilled.
