Hugh gave the classic bellini a River Cottage twist in this scrumptious strawberry recipe

Serves 1

Ingredients

  • About 100g strawberries, hulled
  • 2 tbsp caster sugar
  • Gorse wine (or use sparkling white wine)

Method: How to make gorse and strawberry bellini

1. Put the strawberries and sugar in a blender and whiz to a puree. Measure the puree, add twice as much gorse wine, and stir well. Serve well chilled.
