Gill's canapes are the perfect seasonal snack, as seen on River Cottage

Makes 12

Ingredients

  • 1 ripe pear
  • About 150g blue cheese (such as Dorset Blue Vinny or Stilton)
  • Thyme leaves
  • A little runny honey
  • Freshly ground black pepper

For the crostini

  • 12 small, thin slices of baguette or sourdough bread
  • Olive or rapeseed oil

Method: How to make Gill's pear and blue cheese canapes

1. Preheat the oven to 190°C/gas 5. To make the crostini, lay the slices of bread on a baking tray, trickle with oil and bake for 5–8 minutes, until crisp and golden. Set aside.

2. Peel and core the pear and cut into 1cm cubes. Cut the cheese into similar-sized cubes. Put a couple of cubes of pear and a couple of cheese on to each crostini. Sprinkle each crostini with a few thyme leaves, trickle over a tiny bit of honey, then grind on some black pepper to finish.

  1. Me and my kids absolutely love watching Hugh on TV. He is so different to the other t.v. cooks. I think it's his nature and how he makes things that are so simple and very different. Me and the kids just drooled when he made his Pear and almond cake, which we are attempting to make this weekend.
