Heston Blumenthal leaves other chefs quaking with his recipe for quaking puddings

Serves 4

Ingredients

  • Butter and flour to line the pudding basins
  • 100ml whole milk
  • 400ml whipping cream
  • 65g sugar
  • 4 egg yolks
  • 1 whole egg
  • ¼ tsp nutmeg
  • ¼ tsp cinnamon

Method: How to make quaking pudding

1. Preheat the oven to 90ºC.

2. Grease the pudding basins with butter and cover with a light dusting of flour.

3. Warm the milk, cream, nutmeg and cinnamon in a saucepan (be careful not to let the milk get too hot or it will scramble the eggs).

4. While the milk is warming, whisk the egg yolks, whole egg and sugar in a bowl. Pour the warm milk over the egg and sugar mixture and stir to combine. Pour the mixture into the pudding basins, put the lids on and place them in a bain-marie in the preheated oven.

5. Cook for approximately 50 minutes or until the puddings reach 85ºC (you will need to gently probe the inside of the puddings with a digital thermometer). Remove the basins from the oven and gently turn the puddings out on to individual plates. Serve immediately.

  2. am totally hooked on this fascinating attempt at a revolution of a British institution that is crumbling like old pastry..Will Heston pull it off. That is down to whether he has managed to educate the tase buds of the majority of existing customers who are used to tasteless, bland plates of overflowing slop. The staff at LC however should be praised and an example to all those who are contributing to our rising unemployment ratings. I love the manager he is such an inspiration to his staff and I think now has turned to Heston's way of thinking.

  5. What a brilliant PR exercise - haven't eaten in a Litttle Chef recently; but definitely intend to within next couple of weeks, despite the fact it will mean a 20 mile journey. Looks amazing. Listen to Heston!...

  6. Hi Heston Read my comments Independant website I know your trying I Worked at a Little Chef for about 10 years. Dont think they copied your idea about chicken Tikka its been on and off the menu for years now. Never done Lamb shanks though Tell him about brand standards that every Little Chef in the country should be the same,and have the same menu. That is what is drummed into the staff. The only way you can change Little Chef is to allow each little chef more leeway. Does it matter that much if people prefer the food at a particular restaurant. Good for that restaurant. Customers have got used to being able to chop and change brekfast items.If you can stop that you will solve a major headache I promise you. If you want to know anymore just ask me. If my advise is worth anything at all. After all we are not chefs not cooks just stupid. What I did for the past 10 years was for nothing. Struggling with short staff Not much stock e.g cups and mugs. Keeping the fridges and freezers nearly empty and being blamed for running out of basic things like milk. Was it worth it you tell me?

  7. Come on Heston - open up Big Chef. I know which stop I would make. Every person in the country loves a great breakfast and we all want good quality ingredients and taste. Little chef dont realise the british public have taste. Go for IT !!!

The question is can these pig headed managers of the little chef realise, to change to what heston food is will probably mean losing the customers that already come to this type of establishement to people who know what real food is. I really hope he manages it but I don't think he is getting the support he needs.
