Gordon used his noodle to make this tasty dish on the F Word

Serves 4

Ingredients

  • 6-8 small catfish fillets (depending on size)
  • 1 teaspoon crushed dried thyme
  • 1 teaspoon cayenne pepper
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • 50ml white wine, dry
  • Juice of 2 lemons

For the vinaigrette

  • 100ml olive oil
  • Juice of a lemon
  • Pinch of dried thyme
  • Splash of white wine vinegar
  • Sea salt & freshly ground black pepper

Method: How to make Cajun style blackened catfish

1. Rinse the catfish fillets in cold running water then pat dry with paper towels.

2. Make your seasoning mixture by combining crushed dried thyme leaves, cayenne pepper, black pepper, salt, onion powder and paprika in a small bowl. Add olive oil, enough to make a marinade consistency. Add the juice of 2 lemons and mix well.

3. Place the fillets in the bowl and coat well in the marinade.

4. To make the vinaigrette, whisk together all the ingredients in a bowl, season to taste at the end and set aside.

5. Heat the pan until it is very hot, add a splash of olive oil. Carefully place the catfish fillets into the pan pouring in the remaining marinade, cook for about 4 minutes on both sides. (Note: this ‘blackened’ seasoning mixture will produce some smoke and apparently another way to tell when to turn the fish is when the smoke turns gray). Deglaze the pan with the white wine.

6. Serve finished fillets wrapped in a lettuce leaf with a drizzle of the vinaigrette.
