This simple fish dish fresh from the F Word kitchen tastes delicious on a warm, summer day
Serves 4
1.Combine the gherkins, chives, crème fraiche, horseradish and lemon juice in a bowl, mix well and season to taste. Carefully flake the trout and then gently fold through the crème fraiche mix making sure not to break up the fish flakes too much. Make five little quenelles per person and serve each inside the lettuce leaves.
2.To serve squeeze a few drops of lemon juice onto each quenelle, garnish with the pea shoots and drizzle over a little olive oil.
