Gordon Ramsay and his brigade of amateur chefs served shepherd's pie served with pan-roasted carrots to diners at the F Word restaurant

Serves 4

Ingredients

Shepherd's pie

  • 2 tbsp olive oil
  • Sea salt and freshly ground black pepper
  • 500g minced lean lamb
  • 1 large onion, finely grated
  • 1 large carrot, finely grated
  • 2 cloves garlic
  • 1-2 tbsp Worcestershire sauce
  • 1 tbsp tomato puree
  • Handful of thyme sprigs, leaves picked
  • 1 sprig of rosemary, needles chopped
  • 250ml red wine
  • 300ml chicken stock
  • 1kg Desiree potatoes, peeled and cut into chunks
  • 50g butter
  • 2 egg yolks
  • Parmesan, for grating
  • Olive oil
  • Sea salt & freshly ground black pepper

Pan-roasted carrots

  • 2 sprigs of rosemary
  • Small handful of thyme sprigs
  • 1 garlic clove
  • 500g medium sized carrots, peeled and trimmed
  • 2 tbsp olive oil
  • Sea salt and freshly ground black pepper
  • Few knobs of butter

Method: How to make shepherd's pie

1. Preheat the oven to 180˚C/gas 4 -and get prepped by watching Gordon prepare this shepherd's pie.

2. Heat the oil in a large pan until hot. Season the mince and fry in the oil over moderate to high heat for 2-3 minutes. Stir the onions and carrot into the mince then grate the garlic in as well. Add the Worcestershire sauce, tomato puree and herbs and cook for 1-2 minutes, stirring constantly. Pour in the red wine and reduce until almost completely evaporated. Add the chicken stock, bring to the boil and simmer until the sauce has thickened

3. Meanwhile, cook the potatoes in boiling salted water until tender. Drain then return to the hot pan over low heat to dry out briefly. Pass them through a potato ricer then beat in the egg yolks, followed by about 2 tbsp grated Parmesan. Check for seasoning

4. Spoon the mince into the bottom of a large ovenproof dish. Using a large spoon, layer the mashed potato generously on top of the mince, starting from the outside and working your way into the middle. Grate some extra Parmesan over and season. Fluff up the mash potato with a fork to make rough peaks. Bake in the oven for approximately 20 minutes, until bubbling and golden brown

5. For the carrots bring a pan of water to the boil with the rosemary, thyme and garlic. Boil the carrots in the water for 3 minutes to soften slightly, then drain and pat dry. Heat the oil in a large non-stick sauté pan then add the carrots and some seasoning. Brown the carrots all over until just tender, adding the butter towards the end of cooking

  1. Wendy, I don't know where you live but I can think of at least two dozen places to get lamb that are less than 3 miles of where I live. It's not at all hard to get lamb in the states.

  2. Chicken stock is used in dishes due to the very mild flavour. Red meat stock tends to be richer and would dettract from the flavours that should be there. Thats why most recipies use either veg or chicken stock. Stock provides the moisture and nothing more.

  6. Made this for may family tonight. They loved it. I wish lamb was more readily avaiable in the states. Lucky for me I found a grocier near by that carries ground lamb. Would love to see items with both UK & US measurements for easier conversion.

  7. I love this recipe. I tried it last week and found it realy easy to do. Clear and simple instructions with the use of fresh healthy ingredients. My two boys who won't eat carrots or onions if they can see them loved it, its all hidden and very tasty. you don't even need an expensive wine I used a house red wine from Tescos. I would say to use good minced lamb like I did from the a local butcher tasted a whole lot better and about the same price. I tried it with lamb mince from the supermarket it was not the same. well done Gordon another fantistic easy recipe.

  8. I tried cooking this on sunday for me and my 2 housemates. I didnt quite follow the recipe to each ingredient (like substituting the red wine for gravy granules) but it werent too bad. Also I kind of over did it with the quantities which probably worked out a tad better. Also had a go at the pan roasted carrots, which were a pleasant surprise. Not really used to using herbs but as my housemate said it took away the carrot taste???

  11. An excellent recipe Gordan. I have tried many other recipes for this dish but none seem to come out with the taste as this one. We are not a lover of parmisan cheese so used a strong mature cheddar instead it was just as nice...WELL DONE Gordan...Thanks for giving us great dishes we can cook ourselves

  13. Iv just got back from buying the ingreadents for this as im making it for my new flatmates tonight, didnt know what red wine to use so jus brought any and am using mixed herbs (dried) instead of fresh, and frozen lamb mince, am praying it turns out alrite. Thanks for the recipe!

  18. My husband and I actually cook this with lean turkey mince (a bit healthier than beef and lamb is difficult to find in the US). We also add a bit of ketchup and reduce the tomato puree. Cook on 400 degrees fahrenheit in the US and you can usually find a measuring cup with mL conversions. Gordon's recipes always come out beautifully. Thanks!

My mum has cancer and is currently going through Chemotherapy and cannot eat alot of foods, so as the only person who can cook, i'm struggling to know what to cook her. Hope you could help?   43. Hi Tried Gordon Ramsay's shepherd's pie tonight, with beef mince, not lamb - my husband doesn't like lamb. It worked very well indeed. Re the 50g of butter in the mash. No, the recipe didn't say I should!!! However, I think that would have improved the mash. But a real good tasty meal. Thanks Gordon.

  45. I just made this and it smells, looks and tastes amazing. I like a lot of veg in my pies, so I added mushrooms and courgettes. And I had a glass of wine while making this. Its going to be a favourite for sure!!

  49. Try these variations- Use left over lamb from your roast dinner mince it up dont put the herbs or garlic in as i roast my lamb with them allready(dont want to over do it) and use marfona potatoes boiled and mashed with a leek.... my kids love it......

  50. I love Gordon's Shepherds Pie and on Saturday went and bought 'Gordon Ramsay's Fast Food; recipes from the F Word' so I didn't have to look it up on line all the time. Whilst there are some lovely recipes which of course I will try the Shepherds pie isn't.....odd as this book is advertised at the bottom of the recipe, which book is it in???!!

  53. This is a great recipe - but try also Ramsey's Venison Cottage Pie recipe (on the Times website). It's fantastic. Very similar to the Shepherd's pie, but with diced venison. Great English comfort food.

  55. I wanted a recipe for Shepherd's Pie and all I can hear is Gordon commenting about how a chef must know how to make one. I googled Gordon and shepherds pie and found this one. I also found a website to convert the UK measurements to US. I cannot wait to try it.

  57. Hi, Made this for the first time tonight. Used venison instead of the lamb, did not have parmesan so put in a good dollup of sour cream into the potatos instead. It was delicious and the kids ate it without fuss. With the pan roasted veg, I added parsnips and finished the dish with a splash of real maple syrup and a squeeze of lemon -- carmellized very nicely. I must say it was not especially fast -- maybe because I was working with 1.5 kilos of meat -- it was a solid 2 hours start to finish. The smell in the house is amazing. Thanks.

  60. I am a working Mum of 2 little ones, I make this recipe with a Kilo of mince then double other ingredients. I then divide into 4 portions eat 1 then freeze 3. The freezing doesnt spoil the taste and its dead easy to make the mash while trying to get the children to bed..

  65. Well what can i say!!! I'm a young mum that works full time and dosen't really have time for cooking, but today i thought i need to change what we eat and start from scratch, so i have. I love watching Gordon Ramsay in the kitchen, F word, Ramsays kitchen nightmare, you name it i watch it, everything he makes looks beautiful, so i've started with something every one will love and it shepherds pie. you have enspired me to cook Gordon thanks your a star xx

  67. I hate watching cooking programmes normally; i refuse to watch them. I have never been inclined to watch any Gordon Ramsay shows until 3 weeks ago when by chance the F Word was on and i could not find the remote.Now all i can say is how cool are you Gordon!! I love watching the shows because they are cooking but with major added entertainment. I am now an avid fan and keen cook.
