Try Gordon's twist on this favourite eggy breakfast, straight from the F Word kitchen.
1. Break the eggs into a cold pan. Add the butter and crème fraiche and season with sea salt and freshly ground black pepper.
2. Place the pan over a low heat, stirring the eggs frequently. After a few minutes, as the eggs are beginning to set, add the chives, when the eggs are almost ready add in the urchin roes. Season with sea salt and freshly ground black pepper and serve in the urchin shells.
