
Impress your guests at Christmas by making your own focaccia with cranberry and rosemary, from Gordon Ramsay's Christmas Eve special.
1. In a bowl mix together the water, yeast and sugar and leave to foam.
2. In a separate bowl stir the flour, rosemary and cranberries together and add a pinch of salt.
3. Make a well in the centre and gradually pour in the yeast mixture and 50ml olive oil. Work together until it forms a soft dough.
4. Turn the mixture out onto a floured surface and knead into a smooth, elastic dough - this should only take about 5 minutes.
5. Lightly oil a bowl, place the dough inside and cover with a clean tea towel. Leave in a warm place for 30 minutes, or until it has risen to approximately double its size.
6. Preheat the oven to 200c.
7. Remove the dough from its bowl and knead again. Place on an oiled baking sheet and gently press it out to into a 1cm thick rectangle.
8. Dimple the dough with your fingertips. Scatter a few rosemary leaves on top, add a sprinkling of salt and drizzle with some extra olive oil.
9. Bake in the oven for 30 minutes, or until golden brown. Serve while warm. Delicious.
