Tom Barker Bowles goes the whole hog with this bruscetta recipe on his F Word adventure
Serves 10 as canapés
1. Heat the olive oil in a large saucepan, add the offal and sauté till brown.
2. Deglaze pan with a splash of sherry. Reduce heat and add the garlic, tomatoes and season lightly simmer for 1 hour or until the offal in tender.
3. Taste and adjust the seasoning if necessary. Spoon onto the crostini and garnish with the chopped parsley. Serve immediately.
