Enjoy this easy peasy pea and watercress soup from Gordon Ramsay's Cookalong Live

Serves 4

Ingredients

  • 1 tbsp olive oil
  • ½ white onion
  • 4 slices smoked streaky bacon
  • 500g frozen peas, thoroughly defrosted
  • 60g watercress
  • 20g (or small bunch) fresh mint leaves
  • Approx 550ml boiling water
  • Approx 30ml double cream
  • Salt
  • Pepper

Method: How to make minted pea and watercress veloute

1. Heat the oil in a pan. Slice the onion and chop the bacon before frying together for 1-2 minutes.

2. Once the onion has softened and the bacon has browned use a pair of scissors to chop in the mint leaves. Allow to cook briefly before adding the peas.

3. Season with a little salt, then add the watercress and allow to sweat down for 30 seconds.

4. Pour in 550ml boiling water and allow the peas to cook - approximately a further 1-2 minutes.

5. Remove from the heat and transfer the soup to a liquidiser and blend. Alternatively, use a hand blender and blend in the pan until smooth. If the soup is a little too thick, add an extra splash of water.

6. Adjust the seasoning if necessary and pour the soup into serving bowls.

7. Drizzle with a swirl of cream to serve.

  3. I have just made your minted pea and watercreen veloute and took some to work for tasting and they loved it. I would definitely recommend this recipe.

  4. I hate peas and soup bit loved this veloute! Unfortunately I haved the recipe as everyone said they did not like the sound of this but when I cooked it ...it was a triumph. Sxxt! Never mind it was great!

  5. i just love watching Gordon's cookalong and found Johnny Vegas absloutley hilarious. I usually just make a family recipe lasagne but from now on i'm making Gordon's Classic and a nice Pea Volute !!

Have to agree that the soup was lovely, and very easy to make as well - it's about the first time ever that I have cooked three dishes (in advnce, and not under pressure - too late for me/us, as we have 2 kids under 2!) that looked the same as the chef themselves made! Agree that the blokes in Halifax made fools of themselves a bit, but that is their problem, and it is a late show, so language/nudity, etc are to be expected?!?! You'll see and hear worse on the average high street of an afternoon / evening!

  7. Made my husband sit and watch this programme with me as he has said he wants to learna to cook. We enjoyed the cookery lessons but were disgusted with the behaviour of the 4 men who where cooking along with the show, and hope that this will not be televised again in subsequent programes, when there were so many other people you could have shown.Also a reference to the colour of Marys hair was totally unnecessary and I was to make a formal complaint to Channel 4 about this.May I congratulate Gordon and the fact that he did not even say the F word in the first part of the programme. In the light of the Ross and brand episode we do think that you need to be aware of the people who you ask to cookalongside Gordon. Johnny Vegas brought a breath of fresh air to the programme and made the cooking experience fun!!!

  8. How do we get arty swirls in the soup? Always wanted to know that... can we have a little cream pattern swirl class on Friday? Also it would be really nice if the programme could be on C4 oD as I don't want to wait again for an hour till c4+1 tells me again what to do with the broccoli for me to continue where I left off like 45 min earlier. Got seriously behind with the pastry last time! Still have to do the crumble! Could just follow the recipe but cooking along with Gordons enthusiasm is much more fun!
