Gordon went retro with this mandarin classic from Cookalong Live

Serves 6-8

Ingredients

  • 2 x 298g tins mandarin segments

For the base:

  • Butter for greasing
  • 175g digestive biscuits
  • 75g unsalted butter

For the filling:

  • 400g cream cheese
  • 2 vanilla pods
  • 100g icing sugar
  • 1 orange, zest only
  • 300ml double cream

Method: How to make mandarin cheesecake

1. Lightly grease a 20cm/8" spring-form cake tin with butter.

2. Drain the mandarin segments and place them on a plate lined with kitchen paper and set aside.

3. To make the base, place the biscuits into a food processor and blend to form fine crumbs.

4. Melt the butter in a medium saucepan, add the biscuit crumbs and stir to combine. Transfer the mixture into the cake tin and press over the tin base, to spread evenly. Place in the freezer for 5 minutes to set.

5. Beat the cream cheese in a large bowl. Split the vanilla pods open, scrape out the seeds and mix them into the cream cheese. Sift in the icing sugar and grate in the orange zest. In a separate bowl, whisk the cream until you reach soft peaks, then fold it into the cream cheese mixture to combine.

6. Spread the mixture on top of the biscuit base and use a palette knife, or the back of a spoon, to level it out. Chill in the freezer for a minimum 5 minutes.*

7. When ready to serve arrange the mandarin segments on top and carefully remove the cheesecake from the tin.

*Note: if you don’t wish to eat the cheesecake immediately you can allow the cream mixture to set in the fridge for half an hour rather than using the freezer.

  3. How simple is this & delicious too. I attempted to make one from a recipe i had in a book that i couldn't eat till the follwing day, then i fond this. Needless to say i know which one i'll make next time & the cook books now in the bin......

Made this cheesecake but didn't use oranges I used baileys instead and just added 130ml to the beaten cream cheese, I also doubled the digestives and butter to make a bigger cheesecake, I still used the same amount of cream cheese, I then grated some cadburys chocolate over the top and set it in the fridge, it was absolutely delicious, will definately be making this again, nice one Gordon

  5. I tried this receipe as a dessert dish on valentines day and was really delicious. Simple to follow and easy to make also my boyfriend did not beleive I made it from all fresh. A must make dessert and really tastey.

  7. Dear Gordon Ramsay, I love watching your show and watching how people change from the time you enter their restaurant to the time you leave. I also love the simple recipes you make for them as well. I am a low-low-income single mom and am looking for recipes that are tasty, healthy, easy to make and don't cost a lot of money. I have two teenage boys who love to eat. I make a lot of one pot meals and sometimes they do look good and according to my sons, they always taste good. My problem is I've gotten into a rut with with one pot meals. If anyone has any ideas, please let me know. Thanks

  8. Does anyone know what I can use instead of double cream? I can only get 35% cream here, and double cream is around 48%. Anyone have any suggestions?

  9. Just made the cheesecake for the 2nd week running. it is very simple to follow and tastes better that any cheesecake you would buy out of a supermarket. web site has easy to follow instructions.

  11. M Swanson, you're right. This seems to happen a few times with the show. There's a bit more improv creeping into the show. Didn't see the segments getting dried out on kitchen paper either. Does Gordon remember what instructions he's written down?

  13. The procedure on the Show and the instructions on the web site are different for the cheese cake? Does it matter which one you follow? On the web site it says whisk the cream cheese add and ingredients to this then whisk the cream and finally fold together. On the telly it was add ingredients to cream, whisk etc then add the cream cheese?

  23. Why or why is it so difficult to find the actual menu with list of ingredients for each dish together with method? It is there but takes me round the houses and ages each week to find it. Why isn't it the first (and only) choice? It is much more important that a list of ingredients for the supermarket!!!
