Serves 4

Ingredients

For the soup

  • 1lb diced mutton shoulder
  • 3 pints cold water
  • 2 tins kidney beans
  • 1 beef stock cube
  • 450g yam
  • 225g pumpkin
  • 1 tsp thyme
  • 5 large spinach leaves
  • 3 tomatoes, deseeded and chopped
  • 2 scotch bonnet peppers, de-seeded and finely chopped
  • 2 cloves garlic, finely sliced
  • 2 onions, chopped

For the dumplings

  • 12oz plain flour
  • 4oz cornmeal flour
  • Pinch of salt
  • 4 -5 tbsp of water, to bind
  • Salt and pepper

Method: How to make Jamaican pepper pot soup

1. Wash the meat and pat it dry with kitchen paper. Cut it into pieces about 1.5cm square and put it into a large flame proof casserole or heavy based saucepan. Pour over 3 pints of cold water, add the tins of kidney beans (undrained), crumble in the stock cube and allow to simmer for 20 minutes.

2. Peel and cut the yam and pumpkin into bite size pieces before adding to the pot with the thyme, season with salt and pepper. Chop the spinach leaves and add with the tomatoes, chilli peppers, garlic and onion. Leave to simmer for 45 minutes to an hour.

3. 15 minutes before the end of cooking time make the dumplings. Mix the flours and salt, then stir in the water and form it into a dough. Pull off about 12 small pieces of dough one at a time and roll them into rounds. Put the dumplings into the pot immediately after rolling and make sure they’re submerged in the cooking liqueur but aren’t touching (or they’ll stick together). Cook for 10-12 minutes. Dumplings can tend to overflow the pot once in, so best to keep the lid on. If the soup gets too thick add a little extra boiling stock or water.

4. Taste and add extra seasoning if necessary before serving.
