
Gordon put his fish skills to the test with this tasty tuna creation fresh from the F Word kitchen
Serves 4-6
1. Preheat the oven to 200˚C.
2. Fry the chorizo in a hot pan for 2-3 mins until golden brown, add the peppers, garlic and shallots and sauté until starting to soften. In a separate pan roast the cherry tomatoes for a couple of minutes until they start to burst, add these to the peppers then add the sherry and reduce until it has almost evaporated, add the tinned tomatoes, season and finally add the haricot beans, stir well and leave to simmer for approx 10 mins.
3. Meanwhile, dice the fresh tuna and sear in a hot oiled pan(do this in batches if the pan is not big enough) remove and drain on kitchen towel. Layer the tuna and sauce into a baking dish.
4. Whizz up the bread to make breadcrumbs. Mix the Parmesan through the breadcrumbs, season with a little salt and pepper. Scatter evenly over the baking dish. Arrange the cherry tomatoes on top and finish with a little extra parmesan and black pepper.
5 Bake in the oven for 15 – 20 minutes until the breadcrumbs are golden and the tuna is cooked.
