Unleash your inner Italian with this simple lasagne recipe from Gordon Ramsay's Cookalong Live.

Serves 4

Ingredients

  • 2 tbsp olive oil
  • ½ large onion, peeled
  • 1 large carrot, peeled
  • 2 cloves garlic, peeled
  • 2 pinches dried oregano
  • 300g minced beef
  • 1 tbsp tomato purée
  • 1 tbsp Worcestershire sauce
  • 1 bay leaf
  • 30ml (2 tbsp) red wine
  • 1 x 400g tin chopped tomatoes
  • 50ml milk
  • Salt and freshly ground black pepper

For the sauce

  • 25g butter
  • 25g flour
  • 300ml milk
  • Pinch of ground nutmeg
  • 60g Cheddar cheese, grated
  • 30g Parmesan cheese, grated
  • 6 sheets of 'non-cook' lasagne sheets

For the salad

  • 1 tsp Dijon mustard
  • 1 tbsp white wine vinegar
  • 2-3 tbsp olive oil
  • Salt and pepper
  • 1 x round lettuce head, rinsed and dried

Method: How to make Gordon's classic lasagne al forno

1. Pre-heat the oven to 225°C.

2. Heat the olive oil in a hot pan. Grate the onion and carrot and crush the garlic before frying together. Season with the bay leaf, a pinch of oregano, Worcestershire sauce and a little salt and pepper. Allow the onion to soften before making a well in the centre of the pan. Place the mince in the middle of the pan and stir to break it up. Add the tomato puree and allow to cook out for 30 seconds. Continue until all the meat has browned nicely. Add the wine and cook off the alcohol before adding the tomatoes. Leave to simmer for a further 2-3 minutes. Finally add the milk, turn off the heat and set aside (watch Gordon's video on how to prepare bolognaise).

3. To make the cheese sauce, first melt the butter in a saucepan. Add the flour and using a wooden spoon, stir to form a paste. Over a gentle heat add a third of the milk, whisking to prevent any lumps forming. Add the rest of the milk a third at a time, whisking as you go. Season with salt and pepper and a pinch of ground nutmeg. Allow the sauce to cook out for another minute before adding the Cheddar cheese. Stir and remove from the heat (watch Gordon's video on how to make the best white sauce).

4. Spoon half of the meat sauce into the bottom of the baking dish and place pasta sheets on top (break the sheets if necessary to avoid any overlapping). Next, pour in just under half of the cheese sauce, and spread evenly using a spatula before spooning the remaining meat on top. Add the final layer of pasta and use the spatula to pour over the remaining cheese sauce.

5. Finish with the grated Parmesan and sprinkle with another pinch of oregano. Add a light seasoning of salt and pepper before cleaning the edges of the dish and placing in the oven to bake for 20-25 minutes, or until golden brown.

6. In the bottom of your salad bowl use a fork to whisk together the mustard, vinegar and olive oil. Season with salt and pepper. Carefully open the head of lettuce, season inside with salt and pepper. Upend the lettuce headfirst into the salad bowl. Holding the root, wipe the leaves around the bowl to coat in the vinaigrette. Twist the root and pull it out. Turn the dressed head of lettuce onto a large plate and gently open out.

7. Portion out the lasagne and serve alongside the salad.

  3. Absolutely the best lasagne I ever tasted. I have been making the old stand-by for years but this recipe and the techniques taught by Ramsey are impeccable. My family couldn't stop complimenting the chef....ME!! Now I will pass this recipe to my daughters and tell them to trash the old stand-by recipe!

  11. This receipe is fantastic - really simple to make and both my Mom & Dad said it was the best lasagne they had ever tasted! I am cooking it for 9 of us on Christmas eve and I'm sure it will go down a treat. Well worth making and would definitely recommend it.

  12. I've made this a million times and EVERYONE loves it!! I use a can of ratatoille plus half a can of chopped tomatoes - much tastier! I also find doubling up on carrot, onion, oregano, worcester sauce, wine and bay leaves makes it better! For an EVEN YUMMIER twist, chop up 6 slices of chorizo and add with mince - OMG!! Delicious! Good with veggie mince too. Enjoy!

Hi, Planning to make this for a buffet party next week, I would like to prepare a couple of days in advance, so could I make it and freeze it? if so should I oven bake before I freeze and what guidelines would I follow to defrost. Want it to taste as good as possible so if freezing will affect the taste how many days in advance would it last in the fridge? Many Thanks, Finola

  21. Gordon you are the best! I love all your shows and I had a go at just the bolognese last night; I served it with crusty bread and fresh spaghetti. As I very rarely cook (cooking for me is toast!) my Missus was well impressed! It tasted gorgeous! I think she wants me to make it more often now! (Cheers Gordon...damn!). I followed the recipe to the letter and as you say in this video...delicious! I'm having a go at Beef Wellington next. I've fancied that for ages. Gordon is so right...all we want at restaurants is good hearty, wholesome food, cooked in a clean environment and with passion and care. Try Gordon's recipe for Bolognese, it's well worth it.

  25. I see nobody has cared to rectify the wasteful printer set-up. I didn't notice the comments on this till I had attempted to print the recipe and, like the others, wasted six sheets of paper.... not to mention my patience! Having said that, tried the recipe once before and thought it absolutely delicious - the inclusion of the carrot gives it a slightly sweet flavour and we used fresh lasagne sheets which we didn't pre-moisten, but they came out perfect. It made a total lasagne convert out of me - before I could either take it or leave it... not now!

  30. This lasagne al forno is the best I have ever tasted. I had never made lasagne before and to be honest I do not really cook often at home as it is my husband who likes to do most of the cooking. The recipe was simple to follow (even for a beginner like me), well worth a try.

  35. Hello, My name is Ana and Im from Mexico. I love to watch The F word everyday at home, which is my favorite program at the BBC channel (we hardly ended the 3rd season). Hi Gordon, I love your programmes except for Hell's Kitchen in the US in which you may be earning a lot of money but these Americans just don't get the British humor or the bite which has made Simon Cowell famous. However, me an expat living in Peru for over 45 years, I can actually tell you that I and many women like me have remained in the kitchen and actually like cooking good and healthy food from scratch. In fact I was in Europe not so long ago and I cooked a very simple and ordinary spaghetti with tomatoe sauce from scratch which everybody thought was too saulty. I truly believe that this issue about salt and all the other taboos (light food) is a load of crap, after all my mother has eaten this so-called crap and undiet food (never junk food) and is currently 86 years old. I loved your program about tripe because we in Peru have a national dish with tripe called Cau Cau and what is more I saw one of your programs with Joan Collins and there she was talking about Percy. I was overwhelmed! Why you may ask! Because I knew Percy as a child and his mother was my teacher in San Silvestre School (the all English girls school in Peru), so of course greatly gratified and I hope he can teach you some Peruvian dishes that are absolutely fantastic. Visit Peru! Trust me it is a gastronomic orgasm.

  45. wow this was so easy and tasted delicious! was worried the sauce would be hard to do but it was very easy and lump free.also i thought the lasagne sheets wouldnt cook right without presoaking them but it cooked to perfection. i added nutmeg to the bolognese sauce which intensified the flavour, and also chopped a few cherry tomatoes to make the sauce chunkier. will be using this recipe everytime i make lasagne in the future.

  49. Making Gordon Ramsey's lasagne is quite simple and made 3 times now, it taste better than any shop packet lasagne. I soak the lasagne sheets in boiling water first, as I found the first time the pasta did not cook enough. It does not take more than 15mins to prepare then put it oven, it is beautiful.

  50. Making a Gordon Ramsay recipe for the first time -- love the F Word! -- but having difficulties with your measurements! Here, metric, there Imperial...help! What the heck is 400 g of chopped tomatoes in cups? Perhaps you might consider putting both metric and their Imperial equivalents in your recipes?   59. Gordon, This sounds amazing. I come from a pasta loving family and grew up on spegetti and lasagna recipes and some of them take almost all day to prepare. I cant wait to try this. I also want to tell you I love you and your shows. I cant get enough of Hells kitchen and the F word. I watch even the repeats of Ramseys kitchen nightmares and I have recorded as many of your shows as my DVR wil let. I have ordered the first season of as many of your shows that are out on DVD.   70. Great show. Excellent food I can't wait to try out. Very impressed with the besciamella. I am not too sure about the bolognese (we Italian have very strict rules about food). You see, you have to use the peeled tin tomatoes without the juice (which taste very acid) or fresh tomatoes pureed in a food processor (your fresh passata). You can't add milk or tomato paste: it's against the rules! Ciao

  71. perfectly put together,excspecially the beef with the grated onion and grated carrot then combined at the end with the milk amazing cookery,the white sauce was perfect,not like like those supermarket stodge that we hate,thanks gordon for showing us the lasagna,never buy another one from supermarkets again,

  72. Love the show, although agree that the 'guest cooks' can be a bit loud but still entertaining! Just wanted to say that, although I'm sure Gordon wouldn't be happy about it, I tried this recipe today with vegetarian mince (same weight) and it was fantastic, the best vegetarian lasagne I've ever had (and that's a lot!). Go for it, vegetarian or not!

  78. I hated watching the attention-seeking guests. Yes its Friday Night, but we are spending time and money to follow Gorden soo please let us concentrate and hear what he is saying. Gorden is trying too hard to create an atmosphere and its not necessary. Otherwise I will watch the show and cook it a date later which defies the purpose. Can we also have a printer friendly version of recipes please. Thanks

  79. The programme is a really great idea as it will get the whole country cooking (not just Rotherham). BUT the format is already 'busy'enough without loud guests such as Johnny Vegas creating confusion.

  81. Tried the recipe today, mmmmm, very good! Years of making lasagne but have gradually lost the way adding in too many ingredients. Could not believe how tasty this was with so few ingredients. No need for buckets of white sauce.......and it's so easy to make too. Looking forward to Friday fro more inspiration!

The English kind, that's what!!!!Not authentic at all..next thing I know one of my customers will be coming into my restaurant and complaining that my Lasagna isn't right because it's 'not how Gordon does it'... ...Duh!!!!

  87. Great show and Gordon is the only guy that can tell me how too cook. I always thought that I knew how to make the best lasagne. This was until I cooked this version under the tutorlage of the Master! Wow. Not only was the recipe cost effective it was masterly. Honestly the amount I usually pay for my lasagne paid for the entire menue plus 3 bottles of great wine! Thanks Gordon..You are my hero. I am going to the rugga next week but will tape the programme to cook along on Sunday!!!

Love the show, although it would be nice to see the ingredients before the show had started, (for people without computers.)also fed up of the stupid guests trying to be funny, most of the coversation comes back to innuendo's, ie tossing the salad and waiting for a laugh, I am as broadminded as the next, but it is like watching kids trying to upstage each other, And they use the F word so many time I lost count.Is it to impress Gordon. Having said that I will still watch.

  97. I thought it was awful. not a good recipe at all. Very bland and tasted like a microwave meal. No depth I'm afraid. Sorry Gordon LOVE you but you missed the mark this week. Jonny was just annoyingly loud and irritating... Get Jonathan Ross on there!!!

Murrelli Meat Sauce: step one: 1 Onion finely chopped. 2 medium carrots diced finely. 2 sticks of celery diced finely. 1 handful of bacon lardons (a little chorizo is also good for a smokey edge). Olive oil + season. (+garlic 2 cloves if you like lots of garlic) =fry med heat till nice + golden. step two: 1 large pack of lean mince. (400g) garlic (2 or 3 cloves) + season. =fry med heat till brown in separate pan & drain off fat. Add the meat to the golden veg. Mix it all up keeping the heat for a while to cook it over a bit more letting all the flavours blend. stage three: Lower heat and add 1/2 a bottle of red wine. Let it cook in for a while, let the meat absorb the flavor. After the wine has soaked in for a while add the following: a) Good glug of Worcestershire sauce. b) Beef Oxo cube. c) 1 or 2 tins of tomato depending if you like lots of tomato. d) 1 tbs tomato sauce. e) 1 tbs desert spoon. f) 1 ts sugar. g) 1/2 pint of chicken stock. h) Add Oregano to taste... (Dried is stronger than fresh). i) Bay leaf. j) splash of milk or cream. step four: Bring up heat to slight boil, then reduce the heat to a bare simmer and leave for at least 2 HOURS. The longer the better... If you cook it the day before the flavour will have so much depth. Use the same base for a chilli-con-carni, just add kidney beans and chilli powder to taste. Murrelli White Sauce: 25g butter. 25g flour. 300ml milk. Pinch of ground nutmeg. Bay leaf. 1 ts of english or dijon mustard. Layer up the lasagne as usual x4 or 5 layers finishing with sauce on the top. Use lots of Parmesan cheese on top. (So the cheese does not overpower the whole dish) Herb Salad + Murrelli Dressing: 2 part best olive oil. 1 part good balsamic. 1 ts wholegrain mustard. salt & pepper. =Shake and taste to check.

  102. Splendid recipe for lasagne, but Gordon, why not make your cheese sauce the Delia way - ie chuck it all in the pan at once (minus the cheese), and just whisk the whole lot over a high heat. Works every time, no lumps, and it's EVEN QUICKER!!! You still have to cook out the flour of course, otherwise it tastes like - well, raw flour. Love, light and peace.....
