Gordon and Geri Halliwell went head to head in the F Word kitchen with a meatball challenge. Try Gordon's version

Ingredients

  • 200g minced beef
  • 200g minced pork
  • ½ bunch flat leaf parsley
  • A splash of white wine
  • 2 tbsp grated parmesan cheese
  • 2 cloves garlic, chopped
  • 3 tbsp fine breadcrumbs
  • Milk, enough to cover breadcrumbs
  • Plain flour

For the marinara:

  • 2 tins chopped tomatoes
  • 2 shallots, finely diced
  • 3 cloves garlic, halved
  • ½ red chilli, finely sliced
  • 2 tbsp pitted green olives, drained
  • Small bunch basil
  • 1 tbsp chopped fresh oregano
  • Sea salt and freshly ground black pepper
  • Olive oil

Method: How to make Gordon's Italian meatballs

1. Heat the oven to 180˚C.

2. Soak the breadcrumbs in the milk.

3. Lightly fry the shallots, garlic and chilli for 2-3 minutes until soft. Deglaze the pan with a splash of white wine. Add the tomatoes along with the basil, oregano and finally the olives. Simmer to reduce (this should take 5-10 mins).

4. While the tomato sauce is cooking, make up the meatballs: Into the mince add the parsley, parmesan, garlic and add soaked breadcrumbs, mix well. Season with a little salt and pepper.

5. Shape into walnut sized balls and lightly coat the meatballs in the flour and fry in hot olive oil until golden. Add the meatballs to the tomato sauce and bake in the oven for 10 minutes

6. Serve with basmati rice.

  3. An interesting adaptation by the Master. Leave out the bread & flour and cook on low for 3-4 hours for a more developed, authentic flavour

  5. I made this recipe last night, Andy is wrong I acquiesce with the other contributors to the comment section. These recipes are only a guide, you should add your own personality to dishes, I'm added chilli to the sauce and meatballs because I like spicy food. And I am used fresh lasange sheets and rolled them up and chopped along inch length intervals to make a sort of home-made tagliatelle inspired by Jamie Oliver as a view to getting you into making your own pasta for real, taking bits and bats from other chefs is all part of the fun. 'What size of cans for the tomatoes?' Andy says, I think common sense is needed here.

  9. It is obvious that Andy has little knowledge of how to cook (though you don't need much to follow a simple recipe), making very bizarre comments like his. If you follow the recipe (and no you don't have to follow to the letter) what you'll get is a superb rustic italian style dish that should have been (accept for the less competent) relatively simple. You don't have to serve with rice I prefer a nice bit of fresh linguine myself and why not add a little something extra to the sauce or meatballs to give the dish your own spin. I'm a firm believer that recipes are there as a guide with possibilities to expand. Not quite sure how you'd end up with a 'bread or milk slurry' to be honest unless you add too much milk to the bread crumbs and then in turn add it blindly to the meatballs. If you take the time to prepare and think each step of a recipe through you should be fine, I also think Gordon's cooking is great for others to try and follow as most times he keeps things simple.

  10. Andy is clearly not a fan of Mr Ramsey, if you watch his shows you would know what size of tined tomato's to use and its not burgers you making its meatballs who puts onion in come on think about it, if you follow the recipe correctly and put it to practice you'll find after 10 minutes in the oven it all works extremely well, the basmati rice is a change from heavy pasta, i enjoyed it and so did my mates, thanks Mr Ramsey

  11. To those at home, I apologize for my tone in this post. To Gordon Ramsay, you deserve a good knock for publishing this. Fine bread crumbs are canned sand. An unbalanced pork/beef ratio, no onions, and too little parmigiano reggiano in the meat. Do you want a bread and milk slurry? What size of can for the tomatoes? And then you serve it over rice??? This is idiotic. If you want to use the UK's obsession with curries to excuse this, at least add a little cumin to the meatballs and maybe some cream in the marinara. That would still be "fusion" but not quite so obviously phoned-in.
