Gordon Ramsay brings his Cookalong menu to a close with this sumptuous chocolate dish

Serves 4

Ingredients

  • 150g dark chocolate
  • 250ml crème fraiche
  • 284ml double cream
  • 25g icing sugar, sifted
  • 1-2 tbsp coffee liquer (optional)
  • 2 chocolate covered honeycombs (frozen for 10 minutes)

Method: How to make chocolate mousse

1. Break the dark chocolate into small pieces (reserving 25g for grating later) and place in a bowl that fits snugly over a pan of boiling water. Leave until the chocolate has completely melted and then remove from the heat and set aside.

2. Add the crème fraiche to the melted chocolate and whisk until combined. Put the double cream and icing sugar into a separate bowl and whisk with an electric whisk until it forms soft peaks. Fold the chocolate mixture into the cream, add the coffee liquer and stir to combine.

3. Remove the chocolate covered honeycomb bars from the freezer, remove the packets and wrap them in a clean tea towel. Place the tea towel under a chopping board and press down hard on the chopping board to crush the honeycomb. Open up the tea towel and tip the crushed honeycomb into the mousse and gently fold through with a spatula. Spoon the mousse into four small serving dishes and then grate over the remaining chocolate and serve.

  1. Actually, I think Americans call icing sugar 'powdered sugar'... like is used to coat donuts. 'Frosting' is a form of 'icing' which is often made using icing sugar/powerdered sugar, but is not the same thing.

  3. No i made it and the chocolate flavour was just right, not too dark. With all that cream, it doesnt taste bitter or anything. If you use milk chocolate, it wont taste very chocolatey at all. Use Green and Blacks 75%. Its the best! Its the one Gordon likes, i saw the symbol on the chocolate in his training video :P

  4. yes i think you could use milk instead of dark. I don't really like dark so i'll probably just do milk and hope it turns out alright! sounds delicious though!

  6. I dont understand how tuna goes with choclate mousse? :s Call me weird but I don't think as a flavour combination the two would go, sumptuous mousse with salty meaty firm tuna steak? I understand how sweet flavours might go with tuna, a'la asian cooking et cetera, but I question the use of ingredients I am sorry.

  8. Can someone please tell American what icing sugar is? I'd love to try this recipe. Gordon's meat balls are the best we've ever had and his filet beef with noodles and oyster sauce have become a family favorite. Wish we got some of his cooking shows here in the states.
