Gordon serves a Christmas main with a difference in Cookalong Live with this Christmas paella

Please note: This is the new main course for Cookalong 7.

Serves 4

Ingredients

  • 1 red pepper, finely diced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, peeled
  • 400g paella rice
  • 125ml dry white wine
  • 1 tsp smoked paprika
  • Generous pinch of saffron threads
  • 1l hot vegetable stock
  • 12 large fresh mussels, well scrubbed, beards removed
  • 4 large prawns
  • 4 prepared squid, approx 170g in total, sliced into rings
  • Approx 280g monkfish fillet, roughly chopped
  • Handful flat leaf parsley, chopped
  • 1 lemon cut into wedges
  • Olive oil
  • Sea salt and freshly ground black pepper

Method: How to make Christmas paella

1. Heat a couple of tablespoons of olive oil in a large paella pan or frying pan. Add the onion and cook out briefly.

2. Add the chopped pepper and crush in the garlic. Season with a little salt and pepper and cook until softened.

3. Sprinkle the smoked paprika and saffron into the pan. Follow with the rice and stir well so that each grain of rice is well coated in oil.

4. Add the wine and allow to evaporate before pouring in the hot stock.

5. Cover with a lid and leave to simmer gently for 20 minutes. Stir occasionally to prevent the rice from sticking.

6. Five minutes before the end of cooking add the mussels, prawns, squid and monkfish to the pan. Stir, and replace the lid to finish cooking.

7. Just before serving, mix through the chopped parsley and garnish with lemon wedges.

  1. You have definitely made this a very simple explanation for paella. I tried it out for myself, not for Christmas obviously, and it turned out great. Just the right mix of flavors and I was very impressed with the overall taste. I would be interested to hear how Zara got on with her chicken paella. I will be using this recipe this Christmas for sure. Thanks for the great and simple instructions for perfect Paella!

  3. Heyah i watch the program on friday but the paella looked amazing so i just had to make it its the first meal iv eer made on my own properly for my whole family. My mum and brothers dont like fish so im going to add some chicken for them. My mum didnt want me to make what she thinks is a challenging dish since im only 12 , but i think i can do it. I always wanted to be a chef but you apparently have no social life because you work weekends and evenigs all the time. Ps When iv made it ill post an other comment and let yall no how i did

  5. Love the programme and all the recipes- makes me enthusiastic about cooking! I like the ordinary people who get involved but cant stand the celebreties who try to outsmart Ramsay Pity he has not stopped swearing though!
