Serves 4

Ingredients

  • 500g rhubarb, trimmed
  • 2-3 inch piece of ginger
  • 100g caster sugar
  • 40g unsalted butter, cut into cubes
  • Splash of dark rum

For the crumble

  • 50g hazelnuts
  • 100g plain flour
  • Pinch of ground cinnamon
  • 45g cold unsalted butter, cut into cubes
  • 75g demerara sugar
  • Clotted cream, to serve

Method: How to make caramelised rhubarb and ginger crumble with clotted cream

1. Preheat the oven to 200˚C/gas 6.

2. Cut the rhubarb into 2 inch pieces and halve lengthways if the stems are thick. Peel the ginger.

3. Gently heat the sugar in a pan until dissolved and beginning to caramelise. Add the rhubarb and grate in the ginger. Toss to coat. Gradually add the butter and shake the pan to combine. Allow the rhubarb to caramelise evenly, turning if necessary. Add a splash of dark rum and stand back as the alcohol may flambé. Cook for a further minute until the sauce is thick and syrupy and rhubarb is breaking down.

4. To make the crumble topping place all the ingredients in a food processor and blend until evenly combined (if you want to make your crumble mixture a little stickier also add a splash of water at this stage). Transfer the mixture to a bowl until ready to use.

5. Spoon the caramelised rhubarb into the bottom of 4 small individual serving dishes. Sprinkle the crumble mixture on top and bake for 15-20 minutes until golden brown and bubbling.

6. Remove from the oven and serve with a spoonful of clotted cream.

  1. Well i'm in New zealand and it is winter and i managed to get Rhubarb from my local supermarket, heeps of it there, come on England get sorted!!!

  5. ASDA have 500g tubs of frozen Rhubarb in the frozen fruits freezer section. It's already topped and tailed and chopped into 1cm sections. (Tried 4 supermarkets and a large marker) Can I use a hand blender instead of a food processor for the crumble topping?

  6. The sugar just became clumpy initially and turned to toffee apple consistency when the rhubarb was added although heated very slowly. The rhubarb produced too much liquid and the rum didn't ignite. All in all I am not convinced that this recipe is very good. PS. Also need to be very careful with the caramalised sugar - it can burn fingers.

  7. one word for you people that could not get the rhubarb... Waitrose. Just as it is not in season to grow naturally, you don't need to get the tins as you can be sure they grow them in warehouses all year round. The whole dinner was fantastic. Good fun to make. Congrats

  8. Dessert of caramelised Rhubarb and ginger crumble, Where do you get Rhubarb from this time of year, no supermarkets I tried had it in stock. I could only source it frozen locally from a farm shop.

Was watching the programme last night but had not got the ingredients, however the crumble looked so delicious that I promised my hubby that I would make it today but whilest out gathering the necessaries, I can't seem to locate rhubarb ANYWHERE!!!! Have searched in two fruit and vegs shops and three supermarkets- no joy. Give up and going to use apples instead!!!

  11. yes gordon where would one get rhubarb? tesco didnt even know where to get it. At what point did you tell us to put the sugar in the crumble, but hey we will let you off, it was great craic. Everything was fantastic !! looking forward to next week. Donna and Sean Banbridge northern ireland

  13. i have to say that i love watchin gordon ramsay! this is brilliant that he is doing the cook along im tryin out the rhubarb crumble, hopefully it will taste as good as it looks. I would have to say that he is probably the most real chef there is as he is honest about what he says and how he cooks.keep it up gordon.

  19. why dont u suggest to leading supermarkets to sell a Ramsay kit with all ingredients required for each show already made or layed out in a designated area to make it easier and less time consuming to bring it together for(single guys or usless fathers like me)

  20. Looking forward to doing this with my husband and daughter. One course each - just like last time. What is this rhubard business all about though - been to one supermarket and two fruit & veg places and they all looked at me like I was stupid. Going to try it with apple and hope for the best!

  23. I have tried Somerfield, Tesco, Co-op and Sainsbury - no rhubarb. (I have managed to buy a tin of it from the Co-op!........so not sure how my crumble will turn out - perhaps not quite as intended!)

  25. Will be taking part in the cookalong this evening, although only doing two courses. You'd have thought that Gordon would have picked recipes where you can actually get hold of the ingredients. 3 supermarkets, 3 green grocers and the market in Croydon, all saying that rhubarb is out of season. So we'll only be lasting two thirds of the game. At least that's more than Gordon when he gets a football to his feet!

  27. I love Gordon Ramsey the show was great last time we had such a laugh really looking forward to tonight. Don't know why everyone is moaning about cost and rhubarb for god sake it's once in a blue moon, he's not making you do it. The programme isn't called 'Cook Along Cheap' if you want it to taste good you have to pay a little extra. Good luck Gordon got the parents round tonight and I'm sure they will enjoy it too.   30. Managed to get my rhubarb from Waitrose, but yeah unfortunately it's from Holland. With all the hype around at the moment of the benefits of using seasonal produce it does seem strange that Gordon would choose out of season ingredients. The same could be said for the kilogram side of salmon?? Seriously, what kind of fishmongers does he expect people too have?? There’s one that I know of where I live and it's miles away, so have to rely on the supermarkets. Luckily Morrisons has a good fish counter but I still have to make do with fillets pushed back together! Plus a kilo seems an awful lot for four people!

  31. Can't wait for Friday. Love everything Gordon Ramsay. Was pretty stressed last time but good fun and tasted really good. My only problem is can't get rhubarb anywhere as it's not in season!
