1. Preheat oven to 200°C.
2. Using a sharp knife slit the chicken breast lengthways being careful not to cut completely in half. Open it out ready to fill.
3. To make the garlic butter cream the butter, garlic, herbs and lemon juice together. Spoon the garlic butter into the centre of the butterflied chicken – reserve a spoonful of garlic butter to season the broccoli later. Fold the chicken breast back over to cover the butter.
4. Toss each breast in the flour, then brush over with the egg wash and finally roll in the breadcrumbs.
5. Place the kievs on a lightly oiled baking tray and bake in the oven for 20 – 25 minutes until cooked and golden.
6. Add a spoonful of olive oil, some salt, pepper and the sugar to the water before boiling the chopped potatoes until tender. Drain and mash together with the butter and milk.
7. Boil the broccoli in salted water until tender. Drain and mix through the remaining spoonful of garlic butter and serve.
