These wonderful spiced griddle scones are a classic British dessert with a twist. And they only take 20 minutes, so you'll have plenty of time to get the tea just right!

Takes about 20 minutes

Ingredients

  • 225g self-raising flour
  • 1/4 tsp ground mixed spice
  • 50g butter
  • 50g caster sugar
  • 25g sultanas
  • Grated zest of 1 orange
  • 1 egg, beaten
  • 4 tbsp milk

Method: How to make spiced sultana griddle scones

1. Sift the flour and ground spice together in a bowl and rub in the butter until the mixture resembles fine breadcrumbs. Stir in the sugar, sultanas and orange zest and make a well in the centre. Add the egg and sufficient milk to make a firm dough. On a lightly floured surface, roll out to a 1cm thickness and cut into triangles.

Tip

These are based on classic Welsh cakes. They are cooked on a flat griddle, but a decent non-stick or cast-iron frying pan will work just as well.

2. Cook on a moderately greased griddle pan or heavy-based frying pan for about 5 minutes each side until the scones are browned and cooked. Spread with butter, if you like.

  1. this cake ontains too many ingrediants and i am not able to afford this, please think of the poor and needy when making a new recipe as some of us are unable to make anything nice for the family as we can not afford to buy all the ingrdiants!!!!!!!!!!!!!!!!
