
These wonderful spiced griddle scones are a classic British dessert with a twist. And they only take 20 minutes, so you'll have plenty of time to get the tea just right!

Takes about 20 minutes
1. Sift the flour and ground spice together in a bowl and rub in the butter until the mixture resembles fine breadcrumbs. Stir in the sugar, sultanas and orange zest and make a well in the centre. Add the egg and sufficient milk to make a firm dough. On a lightly floured surface, roll out to a 1cm thickness and cut into triangles.
These are based on classic Welsh cakes. They are cooked on a flat griddle, but a decent non-stick or cast-iron frying pan will work just as well.
2. Cook on a moderately greased griddle pan or heavy-based frying pan for about 5 minutes each side until the scones are browned and cooked. Spread with butter, if you like.
