Beautifully chewy meringues from Soho restaurant, Mrs Marengo's Cake Shop

Ingredients

  • 400g caster sugar
  • 200g egg whites
  • 1 tsp of cider vinegar
  • ½ tsp of cornflour

Method: How to make meringues

1. Preheat the oven to 120°C.

2. Mix the ingredients together. For added zest, stir cinnamon or other flavourings into the mixture right at the end.

3. Spoon small individual amounts of the meringue mixture onto a baking sheet. Top with almonds if desired. Bake for 1 hour 45 minutes.

4. If possible, leave the meringues in the turned off oven overnight.

  1. My friend made the plain version of these meringues for another friend's tea party, we had them withchampagne, strawberries and cream. The meringues were crisp on the outside and had lovely soft and chewy centres. We raved about them that much that she gave us all a copy of the recipe. We now can't wait to make them for the next tea party to see what flavours we all come up with.
