A group of 10 local chocolate lovers have been acting as guinea pigs, meeting regularly to try Willie's trial bars and undergo his chocolate re-education.
It's time for their last session and Willie has one more trick to convert the milk chocolate hard liners. "I'm going to make some little Italian jobs," he winks as he rustles up some tasty biscuits with his chocolate sandwiched inside.
Willie pastes butter and sugar together, whisk in an egg, a teaspoon of almond extract, 100g almonds and some flour and then kneads to make biscuit dough.
Splitting the whole lot in two he sandwiches a whole block of chocolate in between. "Hey presto, one American biscuit," jokes Willie. "We in England might want something with a little more finesse," he adds before splitting the dough into bite sized portions and baking it 160ÂșC for 20 minutes.
