As Britain struggles in the wake of the credit crunch Willie has to call in favours to beg and borrow new equipment. He's managed to assemble a handful of machines capable of treating chocolate from the tempering stage to the wrapping in foil.
Unfortunately for Willie the machines seem to have a mind of their own and his first attempt at packaging a bar sees most of the chocolate end up on the floor. "Can you see the principle?" he shrugs as chocolate flies everywhere.
Financing nightmares and machinery woes are a world away from Willie's time in Venezuela, a country he'll always call home. Willie reminisces about scrumptious fish suppers where freshly caught snapper (or mullet) could be fried up on the sea shore with chilli flakes, cacao and a good squeeze of lime.
