Finally convinced by the enormity of the job, Willie decides to go against his instincts and explore the possibility of outsourcing some of the production. He heads to one of the largest chocolate makers in England, Classic Couverture, in Liverpool to see how they work.
The cottage industry production is central to Willie's brand and he's anxious about moving away from such a 'hands on' approach. "I'm used to making things myself," he explains, "I grow them, I make them, I get the finished product."
Willie's interested to see how his beans will fare through the highly mechanised process and, after his first taste, he's impressed with the tasty, lingering flavour. Willie is tempted but after much deliberation he makes his decision about outsourcing. "It's not the way for me," he sighs.
