Willie's 100 per cent cacao bar was one of a kind but his new offering will sit bang in the middle of one of the most competitive markets in Britain. To be in with a fighting chance, Willie has to increase his scale by a huge margin.
He orders in new equipment and persuades a friend to give him some old chocolate holding tanks. "I feel like a kid and I've got a new motorbike," giggles Willie as his new tools arrive. Unfortunately, he forgot to measure up properly and the tanks only just fit through the door.
As he's working 18 hours a day Willie admits his family life often takes a back seat - and Tania is anxious he's exhausting himself at the factory. "It's not a case of taking time off and the factory is up and running," explains Willie, "the factory's not built."
