As spring reaches its peak, Hugh's keen to show us how to grow and cook the best the season has to offer.
Lettuce is easy to grow and easy to eat but Hugh thinks we take it for granted. With successive growing you could even be harvesting it into the winter so to keep your interest alive for three seasons you'll want to try it in more than just salad.
Hugh challenges Tim, chef at the Canteen, and Gill, Hugh's right hand man at the River Cottage cookery school, to come up with a recipe to transform lettuce from a bit on the side to the main event. There's a slot on the Canteen menu at stake and the boys' competitive spirit is soon flaring.
Tim makes a twist on the Caesar salad with his lettuce with breadcrumbs and anchovy dressing recipe. Gill makes a salad with radish and snails that he calls gardener's revenge and as for Hugh, he's only gone and barbecued his little gem hearts.
