Hugh might allow himself a quick coo over the baby lamb but he's practical about the animal's ultimate destiny.
He thinks that the meat-eating public has lost its way with meat because we're used to plucking pre-packed cuts from the supermarket shelves.
"If I had my way, all meat eaters would have to have a little spell as a butcher's apprentice," Hugh says. His own new apprentice is Susan, a vegetarian of 15 years, who's hoping she can overcome her distaste for meat to eat it at her wedding.
