Asparagus lover Hugh can't wait two whole years to get his green spears into Canteen. He wants asparagus on the menu right now.
Hugh and head chef, Tim, go to visit producer, John, to get some fresh-as-it-gets asparagus for that night's service.
The best asparagus has firm, smooth spears with tight buds.
The eager beavers get their hands dirty reaping the crop but they're picking against the clock. Service is in little over two hours and there's still the small matter of whose recipe will make the grade.
