Elegant, tasty and pricey, asparagus is the king of spring vegetables. Astoundingly River Cottage doesn't have an asparagus bed - a calamity for such fervent seasonal eaters.
So Hugh and Catherine get to work rectifying the situation. To cut the growing time they plant one year old asparagus crowns but to make sure the beds are firmly established they won't be able to harvest their asparagus for two years.
"Oh no I've had an accident! A delicious accident," calls Hugh shoving a contraband spear into his mouth.
"Quick! Cover them up!" says Catherine.
