
Hugh's journey to raise the profile of sustainable fish is drawing to a close and he's homeward bound to the to the West Country.
His next mission is to help the shopper make sure that the fish they're buying is from a trusted source;
"There is no doubt that more and more people want to know that the fish they are eating has been caught in a sustainable way. But there is a fundamental problem because if you are out shopping for fish or ordering fish in a restaurant can you really know who has caught it and how." Hugh observes.
So he teams up with the West Country's most progressive fishermen to investigate commercial developments in sustainable fishing and learns the vital role of cow dung in fish farming.
On the menu this week are Cornish sardines (or pilchards as we remember them) caught with specially designed nets that have been in use locally for 100 years.
A bit of local superstition helps Hugh's attempt at fish friendly hand-line fishing. Local fisherman 'Cod' names his bait after 1950s screen goddess Raquel Welsh to tempt the fish into biting, so Hugh follows suit calling his bait 'Ursula'.
Then its back to River Cottage and there's an unusual treat in store for some hungry regulars as Hugh puts his new-found knowledge to the test in an organic carp cook-off.
