For this year's festive pud, Hugh's decided to give the traditional dessert a bit of a face lift – he's turning it into a roly-poly.
Keen to make the most of his deer, Hugh's using venison suet to bind his pud. "It's sure to make the perfect 'doe'," he jokes.
Dough rolled, he adds some boozy, fruity filling and stem ginger to the dough leaving a clear pastry margin, folds the edges and carefully rolls and polls his way to the perfect pudding.
