Held to their bargain, newcomers, Ally and Paul, get started on the cheese-craft. But cheese making is a precise science; have they got a way with the curds?
"Hugh asked for a year's supply of cheese," says Ally, "he made no mention of the quality."
When pay day arrives, Hugh's impressed by the Bramble Farm goat's cheese recipe.
"That's superb," he admits, reaching for another morsel, "it's the real deal."
