Ray, the River Cottage butcher, has a new apprentice - Bramble Farm's very own Claire.
Butchery is a great skill for smallholder to have under her belt to provide fresh meat and save money to boot.
For all her love of piggie, Blossom, Claire's soon a dab hand with the knives. Ray talks her through the cuts, from the priciest pork through to the cheap meats with tips on what she can cook with each part.
"Look how much you can get!" she trills. "That's what amazes me."
Claire and Ray cook a scrumptious roast stuffed pork belly while Hugh has a belly dish of his own rillons.
"For me there's no sizzle like the sizzle of pork," says Hugh, "the temperature of my cockles is definitely going up."
