Spelt is an ancient and hardy form of wheat and increasingly popular with organic farmers in West Country. Dan, the River Cottage baker, loves it and wants to convince Hugh to grow his own.
The tough husk that makes spelt resistant to pests might be an organic farmer's dream but it is a nightmare to remove for wannabe bread makers.
Dan tries the Roman technique of burning the grain and the Chinese method of crushing it with a chariot but those tough old husks are grippier than a limpet. After hours of graft he's only got a tiny pile of grain and Hugh wants 60 spelt bread buns for his veggie feast. Better get a roll on.
