To go with Hugh's home-grown roast Aylesbury ducks, Tim will be serving roast wild mallard. Both will be served up at the duck fair but the question is how to serve them?
Hugh's back on the scrounge, foraging for the blood-red berries of the hawthorn trees, known, unsurprisingly, as haws.
"These are the fattest, reddest haws I've ever seen," giggles Hugh. Oh dear.
Joking aside, Hugh's little berries prove haw-inspiring. On the day of the fair, he serves roast duck wraps with spelt tortillas and haw-sin sauce. Now who's laughing?
