It might get people seeing red but beetroot is Hugh's vegetable of the moment. With varieties like 'bull's blood' out there, there's nothing girlie about this veg. Even if it does turn your wee pink.
Determined to re-educate a nation turned off by pickled beets, he's come up with a novel way to get us eating the rough and ready root. Put it in puddings.
Hugh creates a moist and more-ish beetroot brownie and gets his fellow River Cottage chefs in on the act. Tim bakes a heavenly beetroot and apple crumble and Gill keeps the spirit of summer alive with his double beetroot ripple ice cream.
