Last spring, Hugh helped a group of Bristol families set up a smallholding in the heart of the city. The gallant growers turned their patch from bramble wasteland into Bramble Farm, a working smallholding complete with pigs.
Making the distinction between food and pet was hard for some of the group and when Claire refused to sacrifice her prize porker, Blossom, the farm gained a breeding sow and lost half their winter meat supply.
Making 'waste not, want not' his mantra, Ray, the River Cottage butcher, gave the Bramble farmers a master class in pork thrift. Today's lesson pork sausages and faggots.
