"Apples are not the only fruit," says Hugh, "let's not overlook the subtle curves of the perfect pear."
While the rest of the West Country looks after apples, Hugh heads to Gloucestershire to meet Dave Casper, a man who knows a thing or two about perry.
"In the 16th century it was the drink of choice for Europe's monarchy," boasts Dave.
Hugh joins the farm hands, 'nurdling' pears and narrowly avoids a pummelling from the falling fruit. Keeping with tradition, he will be taking payment in perry.
Back home, Gill uses the fruit to create a delicious pear and blue cheese canapé while Tim puts poached pears on the menu at the Canteen.
Hugh sneaks his new-found favourite drink to die-hard apple fans at a cider party. To everyone's amazement, the usurper doesn't do badly.
