Man can't live on strawberries alone so Hugh goes trout fishing with Tim. They are usually catch-and-release fishers, so catching and eating a wild trout is a once a year treat.
Tim is such a fish fan he believes he can taste the difference between farmed and wild trout. Even with Hugh's trickery Tim picks the wild fish but he is pleasantly surprised by the quality of the organic farmed fish.
To prolong his enjoyment, Hugh pots some trout with a delicious spiced butter, which also makes a delicious accompaniment on picnics or with a seaside snack of shrimps if you're on the shore in search of a free tea.
